NO BAKE PEANUT BUTTER BALLS
1 cup old fashioned oats
1/2 cup peanut butter (or other nut butter)
1/4 cup honey or agave
1/2 cup unsweetened coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla extract
Mix everything together in a bowl until thoroughly incorporated. If mixture is too dry add a little almond milk. Let chill in the refrigerator for half an hour. Once chilled, roll into approximately 24 – 1/2 inch balls and enjoy! Store in an airtight container and keep refrigerated. Great after school snack for the kids!
